You are wrong on the food of Mexico and the United States. Well, if you're talking about Taco Bell, it could be, it is not true. But I'm American, my X, 25, is from Guatemala, my son married a Mexican from Mexico and lived throughout the Southwest.
If you lived in the United States would recognize that there are more places offering authentic Mexican cuisine, no. California, Texas, Arizona and New Mexico is with healthy versions of Mexican food but Mexican food in America is really filled Mexican food in general.
Moreover, when I lived in Mexico and Central America, its food, by nature, a high-fat meal. Fried and high in fat and cheese, no doubt, not just vegetables. (Even if the sauce is a vegetable, hahaha) eat lots of rice, beans and eggs with tortillas and, of course, like all ethnic foods in the fact there are many vegetarian dishes and salads.
